A Taste of the Hills, Rooted in Heritage and Refined Simplicity

We recently visited the very scenic WelcomHeritage Santa Roza Kasauli. At Nirvana, their signature restaurant, the culinary narrative is both expansive and rooted in place. Set within a charming hill property—whose British-era Victorian colonial architecture and forested surrounds are undeniably beautiful—the restaurant carries a warm, understated elegance. The ambience leans toward relaxed sophistication, with inviting interiors and a tranquil pace that complements its mountain setting.

The menu strikes a confident balance between global comfort and regional authenticity, with the Himachali Dham section forming its cultural spine. Dishes like Chana Madra and Himachali Dahi Kadhi showcase a nuanced use of yoghurt-based gravies, delivering depth without heaviness. Equally compelling is the breadth of the offering—ranging from artisanal-style pizzas and pastas to robust Indian mains such as Dal Makhani and Paneer Butter Masala.

The emphasis on locally sourced ingredients is evident in the freshness across plates, while thoughtful touches like allergen indicators reflect a contemporary, guest-centric approach. Desserts—from Gur ki Kheer to Sticky Toffee Pudding—round off the experience with comforting finesse.
